The story of Shingle Inn’s waffles began during World War II, at our original location on Edward Street in Brisbane, just opposite MacArthur Chambers. This military base brought many American servicemen into the Brisbane CBD, just steps away from the original Shingle Inn. In search of a comforting taste of home, they often found their way to our café.
Down in the bakery beneath the café, Shingle Inn’s bakers created a waffle recipe reminiscent of what the soldiers knew and loved. The dish quickly won hearts from both Americans far from home to Brisbane locals and soon became a staple on the menu. A pulley system delivered the freshly made treats from the kitchen to the café floor above, where they were served to customers dressed in their Sunday best.
Drizzled in our signature caramel butterscotch or chocolate sauce, these waffles have remained a firm favourite. Many of our franchisees often hear stories from long-time customers who fondly remember sharing waffles with their parents and now return with children or grandchildren of their own to continue the tradition. It’s a recipe that’s stood the test of time and continues to create special moments across generations.
